A new restaurant that looks to blend clubby vibes with flavors of the Eastern Mediterranean will open later this month at the border of downtown and the West End. Devil May Care, which will be located in the former Sophia’s space at 500 West Sixth Street, is operated by Nova Hospitality, a group headed by Jack Zimmermann. The veteran of the Wynn Resorts’ XS and Tryst nightclubs in Las Vegas has teamed with executive chef Jon Oh, who has worked as executive chef at Scarpetta in New York and as culinary director for New York restaurateur Geoffrey Zakarian.
